Description

These Lemongrass Chicken Noodle Bowls are a delicious Vietnamese-inspired dish featuring marinated grilled chicken, fresh vegetables, herbs, and rice noodles. A perfect balance of flavors and textures in every bite!


Ingredients

Marinated Chicken:

  • 1 pound boneless skinless chicken thighs
  • 2 stalks lemongrass (white parts finely minced)
  • 2 cloves garlic (minced)
  • 1 tablespoon grated ginger
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil

For Serving:

  • 6 ounces rice noodles
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup bean sprouts
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped roasted peanuts
  • Lime wedges for serving


Instructions

  1. Marinate the Chicken: Combine lemongrass, garlic, ginger, fish sauce, soy sauce, brown sugar, lime juice, and oil. Marinate chicken thighs for at least 30 minutes.
  2. Cook the Noodles: Prepare rice noodles per package instructions, then rinse with cold water.
  3. Grill the Chicken: Cook marinated chicken thighs until charred and cooked through.
  4. Assemble the Bowls: Divide noodles into bowls, top with sliced chicken, carrots, cucumber, bean sprouts, herbs, and peanuts. Serve with lime wedges.

Notes

  • Lemongrass paste can be substituted for fresh lemongrass.
