- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- 1/2 teaspoon vanilla extract
- 1 cup white chocolate chips or chopped white chocolate
- 1/4 cup powdered sugar (for coating)
Instructions
- In a small saucepan, combine butter, heavy cream, lemon zest, and lemon juice. Heat over medium heat until butter is melted and the mixture begins to simmer.
- Remove from heat and stir in the vanilla extract.
- Place the white chocolate in a heatproof bowl and pour the hot mixture over it. Let sit for 1-2 minutes to soften the chocolate.
- Stir until the chocolate is completely melted and smooth. If needed, microwave in 10-second intervals to fully melt.
- Cover and refrigerate the mixture for 2-3 hours, or until firm enough to scoop.
- Using a small cookie scoop or spoon, scoop out portions and roll into balls with your hands.
- Roll each truffle in powdered sugar to coat.
- Store in an airtight container in the refrigerator until ready to serve.
