Description

These creamy lemon truffles are bursting with fresh citrus flavor and have a smooth, melt-in-your-mouth texture. Perfect for a refreshing dessert or a homemade gift.


Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 cup white chocolate chips or chopped white chocolate
  • 1/4 cup powdered sugar (for coating)

Instructions

  1. In a small saucepan, combine butter, heavy cream, lemon zest, and lemon juice. Heat over medium heat until butter is melted and the mixture begins to simmer.
  2. Remove from heat and stir in the vanilla extract.
  3. Place the white chocolate in a heatproof bowl and pour the hot mixture over it. Let sit for 1-2 minutes to soften the chocolate.
  4. Stir until the chocolate is completely melted and smooth. If needed, microwave in 10-second intervals to fully melt.
  5. Cover and refrigerate the mixture for 2-3 hours, or until firm enough to scoop.
  6. Using a small cookie scoop or spoon, scoop out portions and roll into balls with your hands.
  7. Roll each truffle in powdered sugar to coat.
  8. Store in an airtight container in the refrigerator until ready to serve.

  • Coat with crushed freeze-dried raspberries or coconut for variety.
