Description

Ingredients

Pasta Salad:

  • 8 ounces short pasta (like rotini or bowtie)
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh basil, chopped

Lemon Dressing:

  • zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon honey or Dijon mustard
  • salt and black pepper to taste

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool.
  2. Prepare the Salad: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and basil.
  3. Make the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, honey or mustard, salt, and pepper.
  4. Combine and Chill: Pour the dressing over the salad and toss until well coated. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
