Ingredients
Scale
Butter Base
- 1/2 cup unsalted butter, melted
Cobbler Batter
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1 cup whole milk
- 1 teaspoon vanilla extract
Topping
- 1 can (21 oz) lemon pie filling
- Zest of 1 lemon
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Pour the melted unsalted butter evenly into a 9×9-inch baking dish to coat the bottom.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.
- Add Wet Ingredients: Stir in the whole milk and vanilla extract into the dry ingredients until the batter is smooth and well mixed.
- Assemble Cobbler: Pour the batter gently over the melted butter in the baking dish. Do not stir to allow the batter to cook evenly with the butter underneath. Spoon the lemon pie filling evenly over the batter.
- Top and Bake: Sprinkle the lemon zest evenly on top of the lemon pie filling. Place the baking dish in the oven and bake for 40 to 45 minutes or until the cobbler is golden on top and bubbly around the edges.
- Cool and Serve: Remove the cobbler from the oven and let it cool slightly for a few minutes. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream for added indulgence.
Notes
- Do not stir the batter after adding it to the melted butter; this allows the cobbler to develop a distinct layered texture.
- Using whole milk helps create a richer flavor and moist texture in the cobbler.
- Fresh lemon zest enhances the lemon flavor; avoid the white pith as it can be bitter.
- Serve warm to maximize the comforting, gooey texture.
- This cobbler can be stored covered in the refrigerator for up to 3 days and reheated before serving.
