Description
A light and refreshing pasta dish with a zesty lemon flavor and tender asparagus, perfect for a quick and healthy meal.
Ingredients
- 8 oz pasta (spaghetti or linguine)
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1/4 cup fresh parsley, chopped (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
- Add the asparagus to the skillet and sauté for 4-5 minutes, until tender-crisp.
- Add the cooked pasta to the skillet with the asparagus. Toss to combine.
- Stir in the lemon zest and juice, and add some of the reserved pasta water to create a light sauce.
- Season with salt and pepper to taste, and toss in the Parmesan cheese until everything is well coated.
- Serve immediately, garnished with fresh parsley if desired.
Notes
- You can use any type of pasta you prefer for this dish.
- If you prefer a vegan version, omit the Parmesan cheese or substitute it with a plant-based alternative.
- For added protein, consider adding grilled chicken or shrimp.
