Description

A light and refreshing pasta dish with a zesty lemon flavor and tender asparagus, perfect for a quick and healthy meal.


Ingredients

  • 8 oz pasta (spaghetti or linguine)
  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped (optional)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
  3. Add the asparagus to the skillet and sauté for 4-5 minutes, until tender-crisp.
  4. Add the cooked pasta to the skillet with the asparagus. Toss to combine.
  5. Stir in the lemon zest and juice, and add some of the reserved pasta water to create a light sauce.
  6. Season with salt and pepper to taste, and toss in the Parmesan cheese until everything is well coated.
  7. Serve immediately, garnished with fresh parsley if desired.

Notes

  • You can use any type of pasta you prefer for this dish.
  • If you prefer a vegan version, omit the Parmesan cheese or substitute it with a plant-based alternative.
  • For added protein, consider adding grilled chicken or shrimp.
