Description

A quick and easy alternative to traditional lasagna, this lazy lasagna casserole combines all the classic flavors in a simplified, layered casserole form perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 jar (24 oz) marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 8 oz cooked pasta (penne or rotini preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Add marinara sauce, garlic powder, Italian seasoning, salt, and pepper to the skillet. Stir to combine and let simmer for 5 minutes.
  4. In a large mixing bowl, combine the cooked pasta with the meat sauce.
  5. In a 9×13-inch baking dish, layer half of the pasta mixture, dollop ricotta cheese evenly, sprinkle half of the mozzarella and Parmesan cheese.
  6. Repeat with the remaining pasta mixture and top with the rest of the mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 20 minutes.
  8. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Let sit for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

  • You can substitute ground beef with ground turkey or Italian sausage.
  • Use no-boil pasta to save even more time.
  • Can be assembled ahead and stored in the fridge for up to 24 hours before baking.
