Instructions

  1. Preheat and prepare zucchini: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Brush the zucchini slices with olive oil and season them with salt and pepper. Roast the zucchini slices for 10–12 minutes, flipping halfway through, until they are tender but not mushy. Remove from the oven and let cool slightly.
  2. Make the ricotta mixture: In a small bowl, mix together the ricotta cheese, grated Parmesan, garlic powder, and Italian seasoning until well combined and creamy.
  3. Assemble the layers: Spread a spoonful of marinara sauce on the bottom of a small baking dish. Arrange 2–3 zucchini slices, slightly overlapping, over the marinara. Spread a few tablespoons of the ricotta mixture evenly over the zucchini, then add another spoonful of marinara sauce on top. Repeat these layers 2 to 3 times, finishing with marinara sauce and a generous layer of shredded mozzarella cheese on top.
  4. Bake the dish: Place the assembled dish in the oven and bake for 15–20 minutes until the cheese is bubbly and golden brown on top.
  5. Rest and garnish: Allow the casserole to rest for 5 minutes before serving to set. Garnish with fresh basil leaves if desired, then serve warm.
