Description

Lasagna Roll-Ups are a fun and delicious twist on classic lasagna, featuring individual pasta rolls stuffed with ricotta, mozzarella, and spinach, topped with marinara sauce and baked to perfection.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups fresh spinach, chopped
  • 2 cups marinara sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil lasagna noodles according to package directions. Drain and lay flat on parchment paper to cool.
  3. In a skillet, heat olive oil over medium heat. Add spinach and cook until wilted. Set aside to cool.
  4. In a bowl, combine ricotta, 1 cup mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Stir in cooked spinach.
  5. Spread 1/4 cup of the ricotta mixture onto each noodle. Roll up the noodles tightly.
  6. Spread 1/2 cup of marinara sauce in the bottom of a 9×13 inch baking dish.
  7. Place the roll-ups seam side down in the dish. Top with remaining marinara sauce and mozzarella cheese.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  9. Let rest for 5 minutes before serving.

Notes

  • You can substitute spinach with kale or chopped broccoli for variation.
  • Use oven-ready lasagna noodles for convenience.
  • These roll-ups freeze well before baking for meal prep.
