Description
Lasagna Roll-Ups are a fun and delicious twist on classic lasagna, featuring individual pasta rolls stuffed with ricotta, mozzarella, and spinach, topped with marinara sauce and baked to perfection.

- 12 lasagna noodles
- 2 cups ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups fresh spinach, chopped
- 2 cups marinara sauce
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Boil lasagna noodles according to package directions. Drain and lay flat on parchment paper to cool.
- In a skillet, heat olive oil over medium heat. Add spinach and cook until wilted. Set aside to cool.
- In a bowl, combine ricotta, 1 cup mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Stir in cooked spinach.
- Spread 1/4 cup of the ricotta mixture onto each noodle. Roll up the noodles tightly.
- Spread 1/2 cup of marinara sauce in the bottom of a 9×13 inch baking dish.
- Place the roll-ups seam side down in the dish. Top with remaining marinara sauce and mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
- Let rest for 5 minutes before serving.
Notes
- You can substitute spinach with kale or chopped broccoli for variation.
- Use oven-ready lasagna noodles for convenience.
- These roll-ups freeze well before baking for meal prep.
