Ingredients
Scale
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 1 can (14 oz) sweetened condensed milk
- 4 large egg yolks
- 1/2 cup key lime juice (fresh or bottled)
- 1 tablespoon key lime zest (optional for extra flavor)
For the whipped cream:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture is evenly moistened. Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake the crust for 8 to 10 minutes, then remove it from the oven and allow it to cool slightly.
- Make the filling: In a separate bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and key lime zest (if using) until the mixture is smooth and fully combined. Pour this filling into the warm pre-baked crust, smoothing it out evenly.
- Bake the pie: Return the pie to the oven and bake for 15 to 18 minutes, or until the filling is just set and slightly firm to the touch. Take the pie out and let it cool to room temperature. Once cooled, chill it in the refrigerator for at least 3 hours to fully set and enhance flavors.
- Prepare the whipped cream: Using a hand mixer or stand mixer, beat the heavy whipping cream, powdered sugar, and vanilla extract together until soft peaks form. Be careful not to overbeat as you want light and fluffy whipped cream.
- Serve: Just before serving, spread or pipe the whipped cream over the chilled pie. Garnish with lime slices or extra zest if desired for an attractive presentation and added lime aroma.
Notes
- For a shortcut, use a store-bought graham cracker crust to save time.
- Nellie & Joe’s bottled key lime juice is an excellent substitute if fresh key limes are not available.
