Description

A rich and creamy Keto Tuscan Soup made with Italian sausage, spinach, and sun-dried tomatoes in a flavorful garlic cream broth. Perfect for low-carb diets.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 cups fresh spinach
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up as it cooks.
  2. Add chopped onion and garlic. Sauté until fragrant and translucent, about 3-4 minutes.
  3. Stir in the sun-dried tomatoes and cook for another 2 minutes.
  4. Pour in the chicken broth and bring to a simmer. Cook for 10 minutes to let the flavors combine.
  5. Reduce heat and stir in the heavy cream. Add red pepper flakes if using. Simmer for another 5 minutes.
  6. Add spinach and Parmesan cheese. Stir until spinach is wilted and cheese is melted.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • Use turkey sausage for a leaner option.
  • Can substitute kale for spinach if preferred.
  • Store leftovers in the fridge for up to 4 days.
