Description
This copycat recipe recreates the popular Joe & the Juice Tuna Sandwich at home! Made with creamy tuna, sun-dried tomatoes, fresh avocado, and a crispy thin flatbread, this sandwich is full of bold flavors and satisfying textures. Perfect for a quick lunch or a light dinner.
Ingredients

1 can (5 oz) tuna in water, drained

2 tbsp mayonnaise

1 tbsp Dijon mustard (optional)

Salt and black pepper, to taste

1 tbsp finely chopped red onion (optional)

2 thin flatbreads or sandwich thins (rye crispbread or whole grain works best)

1/4 avocado, sliced

1 tbsp sun-dried tomatoes, chopped

1 tsp olive oil (for brushing bread, optional)
Instructions

In a small bowl, mix the drained tuna with mayonnaise, Dijon mustard (if using), chopped red onion, salt, and pepper until well combined.

Warm your flatbread in a toaster or pan for 1–2 minutes until slightly crisp.

Spread the tuna mixture evenly on one side of the flatbread.

Add sliced avocado and chopped sun-dried tomatoes on top of the tuna mixture.

Top with the second piece of flatbread. Press down gently.

Optional: Lightly brush the outside of the sandwich with olive oil and toast in a pan or sandwich press for extra crispness.

Slice in half and serve immediately.
Notes

For a low-fat version, use Greek yogurt instead of mayonnaise.

Rye crispbread is closest to the original sandwich texture.
