Instructions
- In a medium saucepan, bring water to a boil. Stir in bulgur, cover, remove from heat, and let sit for 12-15 minutes until tender. Fluff with a fork and let cool.
- In a large bowl, combine the cooked bulgur, chickpeas, cucumber, parsley, mint, red onion, feta cheese, and pistachios.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate until ready to eat.
