- 1 package (3 oz) flavored Jello (any flavor)
- 2 1/2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 2 large egg whites
- 1/8 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- Line a baking sheet with parchment paper or wax paper and set aside.
- In a saucepan, combine the sugar, corn syrup, water, and Jello. Stir over medium heat until the sugar and Jello dissolve.
- Continue cooking without stirring until the mixture reaches 250°F (hard-ball stage) on a candy thermometer.
- While the syrup cooks, beat egg whites and salt in a large mixing bowl until stiff peaks form.
- Once syrup reaches 250°F, slowly pour it in a thin stream into the egg whites while beating continuously on high speed.
- Continue beating the mixture until it becomes thick, glossy, and starts to lose its shine, about 5-7 minutes.
- Stir in vanilla extract and nuts (if using).
- Quickly drop spoonfuls of the mixture onto the prepared baking sheet.
- Let the candy set at room temperature for several hours or until firm.
Notes
- Humidity can affect divinity; make on a dry day for best results.
- Work quickly when spooning the candy, as it sets fast.
- Use any Jello flavor to customize the color and taste.
