- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 (3 oz) package flavored Jello (any flavor)
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour

- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, sugar, and Jello powder until light and fluffy.
- Add the egg and vanilla extract, beating until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until a dough forms.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
- Flatten each cookie slightly with the bottom of a glass or your palm.
- Bake for 8-10 minutes, or until the edges are set and bottoms are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can use different flavors of Jello to create a variety of colors and tastes.
- Add a few drops of food coloring for a more vibrant appearance.
- Do not overbake; cookies will continue to cook slightly after being removed from the oven.
