Description

  • 1 lb Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 can (15 oz) diced tomatoes
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks.
  2. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the diced tomatoes, white beans, chicken broth, oregano, and basil. Season with salt and pepper to taste.
  4. Bring the stew to a boil, then reduce the heat and let it simmer for 25-30 minutes to allow flavors to meld.
  5. If using, stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  6. Ladle the stew into bowls and top with grated Parmesan cheese if desired. Serve hot.

Notes

  • For a spicier version, use hot Italian sausage.
  • This stew tastes even better the next day after the flavors have developed more.
