- 1 lb Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 can (15 oz) diced tomatoes
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups fresh spinach (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks.
- Add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the diced tomatoes, white beans, chicken broth, oregano, and basil. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat and let it simmer for 25-30 minutes to allow flavors to meld.
- If using, stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
- Ladle the stew into bowls and top with grated Parmesan cheese if desired. Serve hot.
Notes
- For a spicier version, use hot Italian sausage.
- This stew tastes even better the next day after the flavors have developed more.
- Can be frozen for up to 3 months.
