- 1 lb Italian sausage, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups cabbage, chopped
- 3 carrots, sliced
- 2 stalks celery, sliced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add Italian sausage and cook until browned, breaking it up with a spoon.
- Add onion and garlic; sauté until onion is translucent.
- Stir in carrots and celery; cook for 5 minutes.
- Add chopped cabbage and cook until slightly wilted.
- Pour in chicken broth and diced tomatoes with their juices.
- Season with oregano, basil, red pepper flakes, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Adjust seasoning if needed and serve hot.
Notes
- Use spicy Italian sausage for a kick of heat.
- For a low-carb version, skip the carrots.
- Leftovers taste even better the next day.
