Description

A refreshing and colorful Italian Pasta Salad made with rotini pasta, fresh vegetables, salami, cheese, and a zesty Italian dressing. Perfect for picnics, potlucks, or as a hearty side dish.


Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 3/4 cup black olives, sliced
  • 1 cup mozzarella balls (bocconcini), halved
  • 1 cup salami, sliced into strips
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley


Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red and yellow bell peppers, red onion, olives, mozzarella balls, and salami.
  3. Pour the Italian dressing over the salad and toss until everything is well coated.
  4. Season with salt and pepper to taste.
  5. Sprinkle with Parmesan cheese and fresh parsley before serving.
  6. Chill in the refrigerator for at least 1 hour before serving for best flavor.

Notes

  • You can substitute mozzarella balls with cubed mozzarella if desired.
  • Add banana peppers or pepperoncini for extra tang.
  • This salad can be made a day in advance for better flavor infusion.
