Ingredients

Units Scale
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup provolone cheese, diced
  • 1/2 cup salami, diced
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped romaine, cherry tomatoes, cucumber, red onion, pepperoncini, and black olives.
  2. Add the diced provolone cheese and salami to the bowl.
  3. In a small bowl, whisk together the red wine vinegar, olive oil, dried oregano, Dijon mustard, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad ingredients and toss well to combine.
  5. Sprinkle grated Parmesan cheese on top before serving.

Notes

  • For a vegetarian version, omit the salami.
  • Add chickpeas for extra protein.
  • Use mozzarella instead of provolone for a milder flavor.
