- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup pepperoncini, sliced
- 1/2 cup black olives, sliced
- 1/2 cup provolone cheese, diced
- 1/2 cup salami, diced
- 1/4 cup Parmesan cheese, grated
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped romaine, cherry tomatoes, cucumber, red onion, pepperoncini, and black olives.
- Add the diced provolone cheese and salami to the bowl.
- In a small bowl, whisk together the red wine vinegar, olive oil, dried oregano, Dijon mustard, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients and toss well to combine.
- Sprinkle grated Parmesan cheese on top before serving.
Notes
- For a vegetarian version, omit the salami.
- Add chickpeas for extra protein.
- Use mozzarella instead of provolone for a milder flavor.
