- ½ cup shredded cheddar or Mexican blend cheese

Instructions
- Preheat the oven. Set your oven to 375°F (190°C) to prepare it for baking the eggs later.
- Sauté the aromatics. Heat olive oil in an oven-safe skillet over medium heat, then add the diced onion and sauté for 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds until fragrant.
- Add beans and sauces. Stir in the drained black beans, diced tomatoes with green chiles (including the juice), and red enchilada sauce. Mix in ground cumin, chili powder, smoked paprika, and salt. Bring the mixture to a simmer and cook for 5 minutes to let the flavors meld.
- Prepare eggs in the sauce. Use a spoon to make small wells in the sauce for each egg. Crack one egg into each well gently, ensuring they don’t break.
- Add cheese and bake. Sprinkle shredded cheddar or Mexican blend cheese evenly over the top of the eggs and sauce. Transfer the skillet to the preheated oven and bake for 10–14 minutes, or until the egg whites are set but yolks remain runny. Bake longer if you prefer firmer yolks.
- Garnish and serve. Remove the skillet from the oven, then garnish with chopped cilantro, sliced jalapeños, and avocado slices if desired. Serve hot with warm tortillas or crusty bread for a complete meal.
