Description

This creamy, smooth, and flavorful hummus is a classic Middle Eastern dip made from chickpeas, tahini, lemon juice, and garlic. It’s perfect as a snack with pita or fresh veggies, or as a spread in wraps and sandwiches. Super easy to make in just a few minutes!


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1/4 cup fresh lemon juice (about 1 large lemon)

  • 1/4 cup tahini

  • 1 small garlic clove, minced

  • 2 tablespoons olive oil, plus more for serving

  • 1/2 teaspoon ground cumin

  • Salt to taste (about 1/2 teaspoon)

  • 2 to 3 tablespoons water (as needed for consistency)

  • Paprika or sumac, for garnish (optional)

  • Chopped fresh parsley, for garnish (optional)


Instructions

  1. In a food processor, combine tahini and lemon juice. Process for 1 minute until smooth and creamy.

  2. Add minced garlic, olive oil, cumin, and salt. Process again for 30 seconds.

  3. Add chickpeas and blend for about 1 minute. Scrape down the sides and blend again.

  4. With the processor running, slowly add 2 to 3 tablespoons of water until the hummus reaches your desired consistency.

  5. Taste and adjust salt, lemon, or garlic as needed.

  6. Serve in a bowl, drizzled with olive oil and sprinkled with paprika or parsley if desired.


Notes

  • For an extra-smooth hummus, remove the skins from the chickpeas before blending.

  • You can use canned or cooked dried chickpeas.

  • Store in an airtight container in the fridge for up to 1 week.
