Description
Huli Huli Chicken is a Hawaiian favorite featuring juicy grilled chicken marinated in a sweet and tangy sauce made with pineapple juice, soy sauce, ginger, and brown sugar. It’s perfect for summer cookouts or weeknight grilling.
Ingredients
- 4 boneless, skinless chicken thighs
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp ketchup
- 1 tbsp rice vinegar
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tbsp sesame oil
- 1/4 tsp black pepper
- Chopped green onions for garnish (optional)
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, sesame oil, and black pepper.
- Place chicken thighs in a resealable bag or shallow dish and pour marinade over them. Marinate for at least 2 hours, preferably overnight.
- Preheat grill to medium-high heat. Oil the grates to prevent sticking.
- Remove chicken from marinade and grill for 5-7 minutes per side or until internal temperature reaches 165°F (74°C), basting occasionally with reserved marinade.
- Garnish with chopped green onions and serve hot.
Notes
- Reserve some marinade before adding chicken to use as a basting sauce.
- Great served with rice and grilled pineapple.
- Can be made with chicken breasts, but adjust cooking time accordingly.
