Description

Huli Huli Chicken is a Hawaiian favorite featuring juicy grilled chicken marinated in a sweet and tangy sauce made with pineapple juice, soy sauce, ginger, and brown sugar. It’s perfect for summer cookouts or weeknight grilling.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1/4 tsp black pepper
  • Chopped green onions for garnish (optional)

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, sesame oil, and black pepper.
  2. Place chicken thighs in a resealable bag or shallow dish and pour marinade over them. Marinate for at least 2 hours, preferably overnight.
  3. Preheat grill to medium-high heat. Oil the grates to prevent sticking.
  4. Remove chicken from marinade and grill for 5-7 minutes per side or until internal temperature reaches 165°F (74°C), basting occasionally with reserved marinade.
  5. Garnish with chopped green onions and serve hot.

Notes

  • Reserve some marinade before adding chicken to use as a basting sauce.
  • Great served with rice and grilled pineapple.
  • Can be made with chicken breasts, but adjust cooking time accordingly.
