Description

This fresh and crunchy salad combines sweet Honeycrisp apples with crisp broccoli, dried cranberries, sunflower seeds, and a creamy dressing. It’s the perfect side dish for potlucks, family dinners, or holiday meals. Quick to make and full of flavor!


Ingredients

  • 4 cups broccoli florets, chopped small

  • 1 large Honeycrisp apple, chopped

  • 1/2 cup red onion, finely chopped

  • 1/2 cup dried cranberries

  • 1/3 cup sunflower seeds (shelled, roasted or raw)

  • 1/2 cup shredded cheddar cheese (optional)

For the dressing:

  • 1/2 cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • Salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine the chopped broccoli, Honeycrisp apple, red onion, dried cranberries, sunflower seeds, and cheddar cheese (if using).

  2. In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.

  3. Pour the dressing over the salad and toss until everything is evenly coated.

  4. Chill in the fridge for at least 20 minutes before serving to let the flavors meld.

  5. Serve cold and enjoy!


Notes

  • You can swap sunflower seeds with chopped almonds or pecans for a different crunch.
