A flavorful and refreshing Honey Mustard Chicken Salad made with tender chicken, crisp greens, and a sweet-tangy honey mustard dressing.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup honey
- 3 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste (for dressing)
Instructions
- Preheat grill or skillet over medium heat.
- Brush chicken breasts with olive oil and season with salt and pepper.
- Grill or cook chicken for 5-7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.
- In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, mayonnaise, lemon juice, salt, and pepper to make the dressing.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
- Top salad with sliced chicken and crumbled feta cheese if using.
- Drizzle honey mustard dressing over the salad just before serving.
Notes
- For extra flavor, marinate the chicken in some of the honey mustard dressing before cooking.
- Use grilled chicken thighs for a juicier alternative.
- Store dressing separately to keep salad fresh if prepping ahead.
