Description

A flavorful and refreshing Honey Mustard Chicken Salad made with tender chicken, crisp greens, and a sweet-tangy honey mustard dressing.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste (for dressing)


Instructions

  1. Preheat grill or skillet over medium heat.
  2. Brush chicken breasts with olive oil and season with salt and pepper.
  3. Grill or cook chicken for 5-7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.
  4. In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, mayonnaise, lemon juice, salt, and pepper to make the dressing.
  5. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
  6. Top salad with sliced chicken and crumbled feta cheese if using.
  7. Drizzle honey mustard dressing over the salad just before serving.

Notes

  • For extra flavor, marinate the chicken in some of the honey mustard dressing before cooking.
  • Use grilled chicken thighs for a juicier alternative.
