Description

Crispy and flavorful homemade taquitos filled with a savory meat and cheese mixture, perfect for snacking or a main meal.


Ingredients

  • 2 cups cooked shredded chicken or beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • 12 small corn tortillas
  • Oil for frying


Instructions

  1. In a bowl, mix shredded chicken or beef, cheese, salsa, garlic powder, cumin, chili powder, salt, and pepper.
  2. Warm tortillas in the microwave or on a skillet until pliable.
  3. Place 2 tablespoons of filling on one side of each tortilla and roll tightly.
  4. Secure with a toothpick if needed to keep them rolled.
  5. Heat about 1 inch of oil in a frying pan over medium heat.
  6. Fry taquitos in batches for 2-3 minutes per side or until golden brown and crispy.
  7. Remove and drain on paper towels.
  8. Serve hot with guacamole, sour cream, or salsa.

Notes

  • You can bake taquitos at 425°F (220°C) for 15-20 minutes for a healthier option.
  • Use rotisserie chicken for convenience.
  • Make-ahead: freeze rolled taquitos before frying or baking and cook from frozen.
