Ingredients
- 2 cups cooked shredded chicken or beef
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/4 tsp chili powder
- Salt and pepper to taste
- 12 small corn tortillas
- Oil for frying
Instructions
- In a bowl, mix shredded chicken or beef, cheese, salsa, garlic powder, cumin, chili powder, salt, and pepper.
- Warm tortillas in the microwave or on a skillet until pliable.
- Place 2 tablespoons of filling on one side of each tortilla and roll tightly.
- Secure with a toothpick if needed to keep them rolled.
- Heat about 1 inch of oil in a frying pan over medium heat.
- Fry taquitos in batches for 2-3 minutes per side or until golden brown and crispy.
- Remove and drain on paper towels.
- Serve hot with guacamole, sour cream, or salsa.

- You can bake taquitos at 425°F (220°C) for 15-20 minutes for a healthier option.
- Use rotisserie chicken for convenience.
- Make-ahead: freeze rolled taquitos before frying or baking and cook from frozen.
