Description

Homemade Star Crunch is a chewy, chocolatey treat made with caramel, crispy rice cereal, and rich chocolate, reminiscent of the classic Little Debbie snack.

Ingredients

  • 3 tbsp unsalted butter
  • 1 (11 oz) bag caramel bits or 35 unwrapped soft caramels
  • 2 tbsp milk or heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1 tsp vanilla extract
  • 4 cups crispy rice cereal

Instructions

  1. In a large saucepan over medium-low heat, melt the butter.
  2. Add the caramel bits and milk (or cream). Stir continuously until fully melted and smooth.
  3. Remove from heat and stir in both types of chocolate chips and vanilla extract until melted and combined.
  4. Fold in the crispy rice cereal, mixing until evenly coated.
  5. Using a cookie scoop or spoon, drop mounds of the mixture onto a parchment-lined baking sheet.
  6. Flatten slightly to form a disk shape and allow to cool at room temperature until set, about 1 hour.
  7. Store in an airtight container at room temperature for up to a week.

Notes

  • Microwave method can be used for melting butter, caramel, and milk together.
  • Use a mix of chocolate types for a richer flavor.
  • Allow treats to cool fully for best texture.
