  2. Make the Batter: In a mixing bowl, beat the egg whites and granulated sugar on medium speed for one minute until slightly frothy. Add the all-purpose flour, salt, melted butter, heavy cream, and vanilla extract. Beat the mixture until smooth and fully combined.
  3. Shape the Cookies: Drop a couple of tablespoons of batter onto the prepared baking sheet, spreading each into a 5-inch diameter circle. Leave enough space to fit two circles comfortably side by side.
  4. Bake the Cookies: Bake the batter circles for 5 to 7 minutes until the edges begin to turn golden and the cookies are set but still pliable.
  5. Fold the Fortune Cookies: Remove the baking sheet from the oven and work quickly. Using an offset spatula, gently lift each cookie. Place your personalized fortune message in the center, fold the cookie in half, then fold the two pointed ends of the semi-circle together to form the classic fortune cookie shape.
