Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Prepare Vegetables: Wash and prepare all the vegetables as listed. Make sure the vegetables are similar in size for even cooking.
  3. Season Vegetables: In a large mixing bowl, combine the vegetables. Drizzle with olive oil and sprinkle garlic powder, thyme, rosemary, paprika, salt, and pepper. Toss until all the vegetables are evenly coated.
  4. Roast Vegetables: Spread the seasoned vegetables in a single layer on the prepared baking sheet. Avoid overcrowding to ensure even roasting.
  5. Cook: Roast in the preheated oven for 25–30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
