- 1 lb lean ground turkey
- 1 lb lean ground beef
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup low-sodium beef broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper, and sauté until softened.
- Add ground turkey and ground beef to the pot. Cook until browned, breaking up the meat as it cooks.
- Stir in chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
- Add diced tomatoes, tomato paste, and beef broth. Stir well to combine.
- Add black beans, kidney beans, and pinto beans. Mix thoroughly.
- Bring chili to a boil, then reduce heat and simmer uncovered for 30-40 minutes, stirring occasionally.
- Adjust seasoning if needed and serve hot.
Notes
- Can be stored in the refrigerator for up to 5 days or frozen for 3 months.
- Top with chopped green onions, low-fat cheese, or Greek yogurt for extra flavor.
- Use all ground turkey for an even leaner version.
