Ingredients
Scale
Potatoes
- 5 pounds Yukon Gold or white potatoes, peeled and cubed
- 1/3 cup chicken broth
- Salt, to taste
Garlic Butter and Herb Mixture
- 1/2 cup unsalted butter
- 7-9 garlic cloves, minced
- 1/3 cup chopped fresh dill
- 1/3 cup chopped fresh parsley
- 1/4 cup chopped fresh chives
- 1 teaspoon sea salt (adjust to taste)
- Ground black pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare Potatoes: Place the peeled and cubed potatoes in a large bowl filled with cold water. Rinse and drain them thoroughly to remove excess starch, ensuring they bake up fluffy and not gummy.
- Season Potatoes: Spread the drained potatoes evenly on the prepared baking sheet. Pour the chicken broth over them to add flavor and moisture. Season the potatoes lightly with salt according to your taste.
- Bake Covered: Cover the baking sheet tightly with aluminum foil to trap steam inside. Bake the potatoes in the preheated oven for 35 to 40 minutes until they are tender enough to pierce easily with a fork.
- Make Garlic Butter: While the potatoes bake, melt the unsalted butter in a small saucepan over medium-low heat. Add the minced garlic along with the chopped dill, parsley, and chives, allowing the flavors to infuse gently. Season the mixture with sea salt and freshly ground black pepper to taste.
- Toss and Serve: Once the potatoes are fork-tender, remove the foil and pour the garlic herb butter over them. Toss gently to coat all the potatoes evenly. Serve immediately for the best flavor and texture.
Notes
- Use Yukon Gold potatoes for a creamy texture or white potatoes for a fluffier result.
- Adjust garlic quantity according to your preference for a milder or stronger flavor.
- For a vegetarian version, substitute chicken broth with vegetable broth.
- Make sure to cover the potatoes tightly with foil to ensure even cooking and moisture retention.
- Fresh herbs greatly enhance the flavor; dried herbs can be used but reduce quantity by half.
