Ingredients
Scale
Soup Base
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups beef broth
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
Pasta
- 8 lasagna noodles, broken into pieces
Cheeses
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked, about 6-8 minutes.
- Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the beef. Sauté for 3 minutes until the onion is softened and fragrant.
- Add Liquids and Seasoning: Stir in the crushed tomatoes, beef broth, and Italian seasoning. Bring the mixture to a simmer and cook for 10-15 minutes to develop flavor.
- Cook the Noodles: Break the lasagna noodles into pieces and add them directly to the simmering soup. Continue to cook, stirring occasionally, for 10-12 minutes until the noodles are tender.
- Melt Cheeses: Stir in the ricotta, mozzarella, and Parmesan cheeses until fully melted and the soup is rich and creamy. Season with salt and pepper to taste.
- Serve: Ladle the hot soup into bowls and garnish with extra Parmesan cheese if desired. Serve immediately.
Notes
- For a vegetarian version, substitute the ground beef with plant-based crumbles or additional vegetables like mushrooms or zucchini.
- Use gluten-free pasta to make the dish gluten free.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
- Add fresh basil or parsley as a garnish for extra flavor and color.
- If the soup thickens too much upon standing, stir in a little extra beef broth or water when reheating.
