Description
Hearty Beef Lombardi Casserole is a comforting and flavorful baked dish made with seasoned ground beef, tomato sauce, pasta, and a creamy cheese layer — perfect for family dinners or potlucks.
Ingredients
- 1 tbsp olive oil
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 8 oz egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook egg noodles according to package directions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 3–4 minutes.
- Add garlic and cook for 30 seconds. Add ground beef and cook until browned. Drain excess fat.
- Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
- In a separate bowl, mix sour cream and cottage cheese.
- Layer half of the noodles in the prepared dish, top with half the sour cream mixture, half the beef mixture, and half the cheddar cheese. Repeat layers.
- Sprinkle green onions on top if using.
- Bake for 25–30 minutes or until bubbly and cheese is melted and golden.
- Let rest for 5–10 minutes before serving.
Notes
- Use ground turkey for a lighter version.
- This casserole can be made ahead and refrigerated for up to 2 days before baking.
- Freezes well for up to 3 months. Thaw overnight in the fridge before reheating.
