Description

Hearty Beef Lombardi Casserole is a comforting and flavorful baked dish made with seasoned ground beef, tomato sauce, pasta, and a creamy cheese layer — perfect for family dinners or potlucks.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package directions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 3–4 minutes.
  4. Add garlic and cook for 30 seconds. Add ground beef and cook until browned. Drain excess fat.
  5. Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
  6. In a separate bowl, mix sour cream and cottage cheese.
  7. Layer half of the noodles in the prepared dish, top with half the sour cream mixture, half the beef mixture, and half the cheddar cheese. Repeat layers.
  8. Sprinkle green onions on top if using.
  9. Bake for 25–30 minutes or until bubbly and cheese is melted and golden.
  10. Let rest for 5–10 minutes before serving.

Notes

  • Use ground turkey for a lighter version.
  • This casserole can be made ahead and refrigerated for up to 2 days before baking.
  • Freezes well for up to 3 months. Thaw overnight in the fridge before reheating.
