Description

  • 2 celery stalks, sliced
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1/2 teaspoon black pepper
  • 1 teaspoon sea salt (adjust to taste)
  • 6 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken breast
  • 2 cups baby spinach or kale
  • 1 tablespoon lemon juice
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent.
  3. Stir in garlic and ginger, cooking for another minute.
  4. Add turmeric, carrots, celery, zucchini, and broccoli. Cook for 5 minutes, stirring occasionally.
  5. Season with salt and black pepper.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  8. Add cooked shredded chicken and greens. Simmer for 5 more minutes.
  9. Stir in lemon juice just before serving.
  10. Garnish with fresh parsley or cilantro if desired and serve warm.
