Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon turmeric powder
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1/2 teaspoon black pepper
- 1 teaspoon sea salt (adjust to taste)
- 6 cups low-sodium chicken broth
- 2 cups cooked shredded chicken breast
- 2 cups baby spinach or kale
- 1 tablespoon lemon juice
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and sauté until translucent.
- Stir in garlic and ginger, cooking for another minute.
- Add turmeric, carrots, celery, zucchini, and broccoli. Cook for 5 minutes, stirring occasionally.
- Season with salt and black pepper.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Add cooked shredded chicken and greens. Simmer for 5 more minutes.
- Stir in lemon juice just before serving.
- Garnish with fresh parsley or cilantro if desired and serve warm.
