Ingredients
- 4 salmon fillets
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup red bell pepper, diced
- 1/4 cup cilantro, chopped
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 small jalapeño, finely chopped (optional)
Instructions
- Preheat grill to medium-high heat.
- Brush the salmon fillets with olive oil and season with salt and pepper.
- Grill the salmon for 4-6 minutes per side, until cooked through and flakes easily with a fork.
- While the salmon is grilling, prepare the mango salsa by combining the diced mango, red onion, red bell pepper, cilantro, lime juice, honey, and jalapeño (if using) in a bowl.
- Once the salmon is done, top each fillet with a generous amount of mango salsa.
