Description

This Healthy Buffalo Chicken Dip is a flavorful and creamy appetizer made with fat-free cottage cheese, shredded chicken, hot sauce, and tangy blue cheese, baked to perfection and topped with fresh green onions. It’s a lighter twist on a classic party favorite, perfect for gatherings or a tasty snack.

Ingredients

Scale

Main Ingredients

  • 2 cups fat-free cottage cheese
  • ½ cup hot sauce
  • 2 cups shredded cooked chicken breast
  • ½ cup reduced-fat sharp shredded cheddar cheese
  • ½ cup blue cheese crumbles
  • ½ tsp garlic powder
  • ¼ cup green onions, sliced

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) to prepare for baking the dip.
  2. Blend Cottage Cheese and Hot Sauce: Place the fat-free cottage cheese and hot sauce into a blender or food processor. Blend until the mixture reaches a smooth and creamy consistency, which will form the base of your dip.
  3. Combine Ingredients: In a separate mixing bowl, combine the blended cottage cheese mixture with shredded cooked chicken breast, reduced-fat cheddar cheese, half of the blue cheese crumbles, and garlic powder. Mix thoroughly to evenly distribute all components.
  4. Prepare Baking Dish: Grease an 8×8-inch baking dish or a 9-inch pie plate with cooking spray or a small amount of oil to prevent sticking. Then transfer the dip mixture into the dish, spreading it to an even layer.
  5. Bake the Dip: Place the dish in the preheated oven and bake for about 20 minutes, or until the dip is thoroughly warmed and the cheese has melted and started to bubble around the edges.
  6. Garnish and Serve: Remove the dip from the oven and immediately top with the remaining blue cheese crumbles and sliced green onions. Serve the dip warm, perfect for dipping with veggies, crackers, or chips.

Notes

  • For extra creaminess, you can substitute part of the fat-free cottage cheese with Greek yogurt.
  • Adjust the hot sauce amount to control the level of spiciness based on your preference.
  • This dip pairs well with celery sticks, carrot sticks, or whole-grain crackers for dipping.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven until warmed through.
