Ingredients
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup natural peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup chopped nuts (optional)
- 1/4 cup dark chocolate chips or raisins
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add the nut butter, honey or maple syrup, and vanilla extract. Mix well.
- Stir in the oats, cinnamon, salt, and optional mix-ins like nuts and chocolate chips.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet and flatten slightly.
- Bake for 12–15 minutes or until the edges are golden.
- Let cool on a wire rack before serving.
Notes
- Store in an airtight container for up to 5 days.
- You can freeze the cookies for up to 3 months.
- Substitute sunflower seed butter for a nut-free version.
