Description

These healthy breakfast cookies are packed with wholesome ingredients like oats, bananas, and nut butter. They make for a nutritious and convenient start to your day.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup natural peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dark chocolate chips or raisins
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the nut butter, honey or maple syrup, and vanilla extract. Mix well.
  4. Stir in the oats, cinnamon, salt, and optional mix-ins like nuts and chocolate chips.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 12–15 minutes or until the edges are golden.
  7. Let cool on a wire rack before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • You can freeze the cookies for up to 3 months.
  • Substitute sunflower seed butter for a nut-free version.
