- 1 lb ground turkey
- 3 medium potatoes, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onions and garlic, sauté for 2-3 minutes until fragrant.
- Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
- Add the diced potatoes, paprika, cumin, salt, and pepper. Stir to combine.
- Cover and cook on medium-low heat for 15-20 minutes, stirring occasionally, until potatoes are tender.
- Uncover and cook for another 5 minutes to crisp the potatoes slightly, if desired.
- Garnish with fresh parsley and serve warm.
Notes
- You can use sweet potatoes as a substitute for regular potatoes.
- Add bell peppers or spinach for extra vegetables.
- Leftovers store well in the refrigerator for up to 3 days.
