Description

A flavorful and hearty Ground Turkey Taco Casserole layered with seasoned turkey, beans, veggies, and cheese – a perfect weeknight dinner the whole family will love.


Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1/2 cup salsa
  • 2 cups shredded cheddar cheese
  • 6 small corn tortillas, cut into quarters
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
  3. Add minced garlic and ground turkey. Cook until turkey is browned and cooked through.
  4. Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa. Simmer for 5-7 minutes until well combined and heated through.
  5. In a 9×13-inch baking dish, layer half the tortilla pieces, followed by half the turkey mixture and 1 cup of cheese. Repeat the layers.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  7. Let sit for 5 minutes before serving. Garnish with chopped cilantro if desired.

Notes

  • Can be made ahead and refrigerated before baking.
  • Use ground beef or chicken as a substitute for turkey if preferred.
  • Top with sour cream, avocado, or jalapeños for extra flavor.
