Description
A flavorful and hearty Ground Turkey Taco Casserole layered with seasoned turkey, beans, veggies, and cheese – a perfect weeknight dinner the whole family will love.
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1/2 cup salsa
- 2 cups shredded cheddar cheese
- 6 small corn tortillas, cut into quarters
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
- Add minced garlic and ground turkey. Cook until turkey is browned and cooked through.
- Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa. Simmer for 5-7 minutes until well combined and heated through.
- In a 9×13-inch baking dish, layer half the tortilla pieces, followed by half the turkey mixture and 1 cup of cheese. Repeat the layers.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
- Let sit for 5 minutes before serving. Garnish with chopped cilantro if desired.
Notes
- Can be made ahead and refrigerated before baking.
- Use ground beef or chicken as a substitute for turkey if preferred.
- Top with sour cream, avocado, or jalapeños for extra flavor.
