  • 2 cups cooked jasmine rice (preferably chilled)
  • 1 lb ground chicken

  • 2 green onions, chopped

Eggs and Oils

  • 2 eggs, beaten

Instructions

  1. Heat the pan: Heat a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil to get it hot and ready for cooking.
  2. Cook the ground chicken: Add the ground chicken to the pan and cook, breaking it up with a wooden spoon until browned and cooked through, about 5-7 minutes. Season with a pinch of salt and pepper, then remove from the pan and set aside.
  3. Sauté aromatics: In the same pan, add the remaining 1 tablespoon of vegetable oil, then add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
