Description

These easy ground beef enchiladas are packed with flavor and smothered in a rich, savory red sauce. Made with simple ingredients, they’re perfect for a weeknight dinner the whole family will love. Serve with rice, beans, or a side salad for a full meal!


Ingredients

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1/2 tsp ground cumin

  • Salt and pepper to taste

  • 1 can (10 oz) red enchilada sauce

  • 8 small flour tortillas

  • 2 cups shredded cheddar cheese (or Mexican blend)

  • 1/4 cup chopped fresh cilantro (optional for garnish)

  • 1/4 cup sliced green onions (optional for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet over medium heat, cook the ground beef and onion until beef is browned and onion is soft, about 6–8 minutes. Drain excess grease.

  3. Add garlic, chili powder, cumin, salt, and pepper. Stir and cook for another 1–2 minutes.

  4. Add 1/3 cup of enchilada sauce to the beef mixture and stir to combine. Remove from heat.

  5. Spread a few tablespoons of enchilada sauce over the bottom of a 9×13-inch baking dish.

  6. Warm tortillas slightly in the microwave to make them pliable.

  7. Spoon about 1/4 cup of the beef mixture down the center of each tortilla, top with a little cheese, then roll up and place seam-side down in the baking dish.

  8. Pour the remaining enchilada sauce over the top of the enchiladas, then sprinkle with remaining cheese.

  9. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and melted.

  10. Let cool for a few minutes before serving. Garnish with cilantro and green onions, if using.


Notes

  • You can use corn tortillas for a more traditional taste.

  • Add black beans or corn to the filling for extra flavor and texture.

  • Make it spicier by adding diced jalapeños or hot sauce to the beef.
