Perfectly balanced with a drizzle of hot honey and a dollop of creamy hummus, this recipe combines savory and sweet elements for a satisfying and nutritious bowl ready in just 40 minutes.

Ingredients

Scale

Roasted Sweet Potatoes

  • 1 pound sweet potatoes, peeled and diced
  • 2 Tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika

Seasoned Ground Beef

  • 1 pound lean ground beef
  • 1 teaspoon 7 spice
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Fresh Toppings

  • 1 cup cottage cheese
  • 1 cup diced cucumber
  • 1 cup chopped tomatoes
  • ½ cup sliced radishes
  • ¼ cup sliced red onions
  • ¼ cup feta cheese crumbles
  • ¼ cup olives (Kalamata or green)

Finishing Touches

  • Hot honey, for drizzling
  • Hummus, for dolloping

Instructions

  1. Prepare and Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the peeled and diced sweet potatoes in olive oil, smoked paprika, sea salt, and black pepper until evenly coated. Spread them out in a single layer on a baking sheet and roast for 25 to 30 minutes, flipping halfway through, until they are golden and tender.
  2. Cook the Ground Beef: While the sweet potatoes roast, heat a large skillet over medium heat. Add the lean ground beef, breaking it up with a spoon as it cooks. When the beef begins to brown, season it with 7 spice, sea salt, and black pepper. Continue cooking and stirring occasionally until the beef is fully cooked and fragrant.
  3. Prepare Fresh Toppings: While the beef cooks, dice the cucumbers, chop the tomatoes, slice the radishes and red onions, and prepare the olives and feta cheese crumbles for topping.
  4. Assemble the Bowls: Divide the roasted sweet potatoes as the base into serving bowls. Spoon the seasoned ground beef over the sweet potatoes. Arrange the fresh toppings around or on top, including cottage cheese, diced cucumber, chopped tomatoes, sliced radishes, crumbled feta, sliced red onions, and olives.
  5. Finish and Serve: Add a dollop of hummus on each bowl and drizzle with hot honey according to taste. Serve immediately while warm and enjoy your nourishing ground beef bowls!

Notes

  • Use lean ground beef to reduce fat content while keeping the dish hearty.
  • You can substitute the 7 spice with a blend of cumin, coriander, smoked paprika, and cinnamon for a homemade version.
  • Adjust the amount of hot honey to your preference for sweetness and heat.
  • For a lower-fat option, replace cottage cheese with Greek yogurt.
  • These bowls are great for meal prep; store components separately and assemble before serving.
