- 1 lb flank steak or skirt steak
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup chopped red onion
- 1/2 cup chopped fresh cilantro
- 1 avocado, sliced
- 1/2 cup crumbled queso fresco
- 1 lime, cut into wedges
Instructions
- In a bowl, mix olive oil, garlic, cumin, paprika, chili powder, salt, and pepper. Rub the mixture onto the steak.
- Preheat a grill or grill pan over medium-high heat.
- Grill the steak for 4-5 minutes per side or until desired doneness. Let it rest for 5 minutes, then slice thinly against the grain.
- Warm the corn tortillas on the grill for about 30 seconds per side.
- Assemble the tacos by adding steak slices to tortillas and topping with red onion, cilantro, avocado, and queso fresco.
- Serve with lime wedges on the side.
