- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 8 oz burrata cheese
- 4 cups arugula or mixed greens
- 1/4 cup balsamic glaze
- 1/4 cup toasted pecans or walnuts
- Fresh basil leaves, for garnish
- Salt and black pepper, to taste
Instructions
- Preheat grill or grill pan to medium-high heat.
- Brush the peach halves with olive oil.
- Grill the peaches for 2-3 minutes on each side until grill marks appear and peaches are slightly softened.
- Arrange arugula or mixed greens on a serving platter.
- Place grilled peaches and torn pieces of burrata over the greens.
- Drizzle with balsamic glaze.
- Sprinkle with toasted pecans or walnuts and fresh basil leaves.
- Season with salt and black pepper to taste.
- Serve immediately.
Notes
- Use ripe but firm peaches for best grilling results.
- Substitute burrata with fresh mozzarella if needed.
- Add a drizzle of honey for extra sweetness.
