Ingredients

Chicken Thighs:

  • 46 boneless, skinless chicken thighs

Marinade:

  • ½ cup honey
  • ½ cup buffalo sauce (adjust to taste)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Garnish:

  • Chopped green onions or parsley, for garnish (optional)


Instructions

  1. Make the Marinade: In a bowl, whisk together honey, buffalo sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Marinate the Chicken: Place chicken thighs in a zip-top bag or shallow dish. Pour in half the marinade, coating all pieces well. Seal or cover and refrigerate for at least 30 minutes (or up to 4 hours).
  3. Preheat the Grill: Heat grill to medium-high, around 375°F to 400°F (190°C to 200°C).
  4. Oil the Grill Grates: Brush grill grates with oil to prevent sticking.
  5. Grill the Chicken: Remove chicken from marinade and discard used marinade. Grill chicken for 5–6 minutes on the first side until grill marks appear.
  6. Flip and Glaze: Flip chicken and brush with some of the reserved marinade. Grill for another 5–6 minutes, or until internal temperature reaches 165°F (74°C).
  7. Final Glaze: In the last minute, brush on more marinade for extra flavor.
  8. Rest: Remove chicken from the grill and let rest for 5 minutes.
  9. Serve: Slice if desired. Serve hot, garnished with green onions or parsley and a drizzle of leftover marinade (optional).
