Description

Grilled Corn on the Cob with Chili Lime Butter is a flavorful, zesty dish featuring sweet corn coated in a spicy, tangy butter made with chili powder, lime, and a hint of salt.

Ingredients

  • 4 ears of corn, husked
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1 tablespoon fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Place the corn on the grill and cook for 10-12 minutes, turning occasionally until lightly charred and tender.
  3. In a small bowl, mix together the melted butter, chili powder, garlic powder, lime juice, salt, pepper, and cayenne pepper (if using).
  4. Once the corn is done grilling, remove it from the grill and brush it generously with the chili lime butter mixture.
  5. Garnish with freshly chopped cilantro, if desired, and serve immediately.

Notes

  • For a smokier flavor, grill the corn with the husk on for the first 5 minutes, then remove the husk and continue grilling.
  • Adjust the level of chili powder and cayenne pepper based on your spice preference.
  • This recipe can be made dairy-free by substituting the butter with a plant-based alternative.
