Description
Grilled Chicken Kafta is a Middle Eastern-inspired dish made with ground chicken, herbs, and spices, shaped onto skewers and grilled to perfection. It’s a healthier alternative to traditional lamb or beef kafta.

- 1 lb ground chicken
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground allspice
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- 1 tbsp olive oil (for brushing)
Instructions
- In a large bowl, combine the ground chicken, grated onion, garlic, parsley, cilantro, and all the spices. Mix well until fully combined.
- Divide the mixture into 8 equal portions and shape each onto a skewer in a long, cylindrical shape.
- Preheat the grill to medium-high heat. Lightly oil the grates to prevent sticking.
- Grill the chicken kafta skewers for about 4–5 minutes on each side or until cooked through and nicely charred.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- For best results, chill the kafta mixture for 30 minutes before shaping onto skewers.
- You can also cook these on a grill pan or under a broiler if a grill is not available.
- Serve with rice, salad, or inside pita bread with tahini sauce.
