Description

Grilled Chicken Kafta is a Middle Eastern-inspired dish made with ground chicken, herbs, and spices, shaped onto skewers and grilled to perfection. It’s a healthier alternative to traditional lamb or beef kafta.


Ingredients

  • 1 lb ground chicken
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground allspice
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil (for brushing)

Instructions

  1. In a large bowl, combine the ground chicken, grated onion, garlic, parsley, cilantro, and all the spices. Mix well until fully combined.
  2. Divide the mixture into 8 equal portions and shape each onto a skewer in a long, cylindrical shape.
  3. Preheat the grill to medium-high heat. Lightly oil the grates to prevent sticking.
  4. Grill the chicken kafta skewers for about 4–5 minutes on each side or until cooked through and nicely charred.
  5. Remove from the grill and let rest for a few minutes before serving.

Notes

  • For best results, chill the kafta mixture for 30 minutes before shaping onto skewers.
  • You can also cook these on a grill pan or under a broiler if a grill is not available.
  • Serve with rice, salad, or inside pita bread with tahini sauce.
