Description

This Grilled Artichokes with Garlic Butter recipe offers a delightful combination of tender steamed artichokes charred perfectly on the grill, then enhanced with a rich and flavorful garlic butter drizzle. It’s a perfect appetizer or side dish that brings out the natural nuttiness of artichokes with a zesty lemon and garlic twist.

Ingredients

Scale

Artichokes

  • 4 fresh artichokes

Garlic Butter Sauce

  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

For Grilling

  • 2 tbsp olive oil

Instructions

  1. Prepare Artichokes: Rinse the artichokes under cool water to clean them thoroughly. Trim about one inch off the top of each artichoke and snip the sharp tips from the leaves to make handling easier and eating safer.
  2. Steam the Artichokes: Place the artichokes in a pot fitted with a steamer basket. Steam them for approximately 30 minutes or until the leaves can be easily pulled away and the heart is tender.
  3. Make Garlic Butter: While the artichokes are steaming, melt the unsalted butter in a small saucepan over low heat. Add the minced garlic and cook gently for about 5 minutes, or until the garlic becomes fragrant but not browned.
  4. Season Garlic Butter: Stir in fresh lemon juice along with salt and pepper to taste into the garlic butter mixture, combining all the flavors thoroughly.
  5. Preheat the Grill: Heat your grill to medium temperature, preparing it for grilling the artichokes.
  6. Grill Artichokes: Once steamed, slice the artichokes in half lengthwise. Brush the cut sides generously with olive oil. Place them cut-side down on the preheated grill and cook for 5 to 7 minutes or until they develop a nice char.
  7. Serve: Remove the artichokes from the grill and immediately drizzle them with the warm garlic butter sauce before serving to enhance their rich flavor.

Notes

  • Steaming the artichokes beforehand softens them and reduces grilling time.
  • Be careful not to burn the garlic in the butter; cook it over low heat for a mellow flavor.
  • You can adjust the lemon juice quantity to your taste for more tanginess.
  • Serve with extra garlic butter on the side for dipping.
  • Fresh artichokes are preferable, but you can use frozen if fresh is unavailable—adjust steaming time accordingly.
