Description

This creamy and healthy chicken salad is made with Greek yogurt instead of mayonnaise, offering a lighter alternative without sacrificing flavor. Perfect for sandwiches, wraps, or a light meal!


Ingredients

  • 2 cups cooked chicken breast, shredded

  • 1/2 cup Greek yogurt (plain, non-fat or full-fat based on preference)

  • 1 tablespoon Dijon mustard

  • 1/4 cup chopped celery

  • 1/4 cup chopped red onion

  • 1/4 cup dried cranberries or grapes (optional)

  • 1/4 cup chopped walnuts or almonds (optional)

  • 1 tablespoon fresh lemon juice

  • Salt and pepper, to taste

 

  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  • In a large bowl, combine the shredded chicken, Greek yogurt, Dijon mustard, and lemon juice.

  • Add the chopped celery, red onion, cranberries (if using), and nuts (if using). Stir everything together until well combined.

  • Season with salt and pepper to taste.

  • Garnish with chopped parsley if desired.

 

  • Serve chilled on bread, in a wrap, or over a bed of greens. Enjoy!


Notes

  • You can substitute the chicken with rotisserie chicken for a quicker option.

  • This salad keeps well in the refrigerator for 2-3 days.
