Description

A refreshing and healthy Greek salad with crisp vegetables, olives, feta cheese, and a light dressing.


Ingredients

  • 1 cucumber, sliced
  • 2 tomatoes, chopped
  • 1 red onion, thinly sliced
  • 1 bell pepper, sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cucumber, tomatoes, onion, bell pepper, and olives.
  2. Add the feta cheese on top of the vegetables.
  3. In a small bowl, whisk together the olive oil, vinegar, oregano, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill in the fridge before serving.

Notes

  • For a more authentic taste, use Greek Kalamata olives and feta cheese.
  • For extra crunch, add some croutons or toasted pita bread pieces.
  • Can be stored in the fridge for up to 2 days, but best served fresh.
