Sauces

  • 1-2 cups Tzatziki sauce
  • 1/2 cup garlic tahini (see notes)

Feta Fries

  • 4 russet potatoes, cut into ¼-inch-thick matchsticks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Freshly ground black pepper, to taste
  • 1/2 cup mixed fresh herbs: dill, basil, parsley (finely chopped)
  • 1 teaspoon lemon zest
  • 1 clove garlic, grated
  • 2 tablespoons toasted sesame seeds
  • 1/2 cup crumbled feta cheese
  • Salt, to taste


Instructions

  1. Marinate the Chicken: In a bowl, combine the olive oil, chopped shallots, garlic, dried oregano, chipotle chili powder, honey, harissa sauce, lemon zest, salt, and black pepper. Add the chicken chunks and toss to coat evenly. If possible, let the chicken marinate for 10 minutes to develop deeper flavor.
  2. Preheat the Oven: Set your oven to 450°F (232°C) to prepare for baking both the chicken skewers and fries.
  3. Prepare and Bake the Chicken Skewers: Thread the marinated chicken pieces onto skewers. Arrange them on a baking sheet spaced evenly. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and lightly charred on the edges.
  4. Make the Fries: While the chicken cooks, toss the potato matchsticks with olive oil, garlic powder, cayenne pepper, and freshly ground black pepper. Spread the fries in an even layer on a separate sheet pan. Bake in the same oven for 15-20 minutes, then flip them over and bake an additional 15 minutes until golden and crispy.
  5. Prepare the Herb-Feta Topping: In a bowl, combine the chopped fresh herbs, lemon zest, grated garlic, toasted sesame seeds, and crumbled feta cheese. Once the fries are done, toss them directly on the baking sheet with this herb and feta mixture. Season with salt to taste.
