Description
Juicy, marinated Greek chicken skewers grilled to perfection and served with crispy golden fries topped with crumbled feta and fresh herbs. This easy Mediterranean-style meal is packed with flavor and makes for a great weeknight dinner or backyard cookout option.
Ingredients
For the Chicken Skewers:

1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces

3 tbsp olive oil

Juice of 1 lemon

3 cloves garlic, minced

1 tbsp red wine vinegar

2 tsp dried oregano
-
1 tsp paprika

Salt and black pepper, to taste

Wooden or metal skewers
For the Feta Fries:

4 medium russet potatoes, peeled and cut into fries

2 tbsp olive oil

Salt and pepper, to taste

1/2 cup crumbled feta cheese

1 tbsp chopped fresh parsley (optional)

1 tsp dried oregano (optional)
Instructions

Marinate the Chicken:
In a bowl, mix olive oil, lemon juice, garlic, red wine vinegar, oregano, paprika, salt, and pepper. Add chicken pieces and toss to coat. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours for more flavor). -
Prepare the Skewers:
Thread the marinated chicken onto skewers. Preheat your grill or grill pan over medium-high heat. -
Grill the Chicken:
Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and has nice grill marks. -
Make the Fries:
Preheat oven to 425°F (220°C). Toss the potato fries with olive oil, salt, and pepper. Spread evenly on a baking sheet lined with parchment paper. Bake for 25–30 minutes, flipping halfway through, until golden and crispy. -
Add the Feta:
Once fries are done, sprinkle with crumbled feta cheese and a pinch of dried oregano and fresh parsley if using. -
Serve:
Serve hot chicken skewers over or alongside the feta fries. Optionally add a side of tzatziki or lemon wedges.

For crispier fries, soak them in cold water for 30 minutes before baking.
